Convection ovens are becoming the norm, but do you really know how they work and what they do? Unlike conventional ovens, convection ovens feature a fan that continuously circulates the hot air in the oven cavity. The movement created – and the air blown directly on food – speeds up the cooking process by approximately 25%.
